Filipino Chicken Curry Recipe
What is Filipino Chicken Curry ?
Filipino Chicken Curry is a flavorful dish that reflects the influence of Indian cuisine on Filipino cooking. It features tender chicken simmered in a coconut milk-based sauce with a variety of vegetables and aromatic spices, creating a deliciously rich and creamy curry.
Ingredients
- Fat & Thin brand curry spice mix
- Powdered Black Pepper
- 3 packs coconut milk (coco mama brand)
- Dari creme margarine (original)
- Lemon grass
- Young ginger (because it's juicy)
- 1 whole & 1/2 Garlic
- 2 big onions or 3 medium size onions
- 1 long green chili finger (Siling haba)
- 3 red chilis
- 2 bell peppers
- 3 potatoes
- 3 carrots
- Salt
- Patis/Fish Sauce
- 2 knorr chicken cubes
- Corn oil
- 4 chicken wings, 4 chicken thighs, and two chicken legs.
Steps
- First, chop all the ingredients. Then sear the potatoes and carrots in corn oil and Dari creme with a bit of salt. When you see browning around the edges, move on to the next step.
- 2nd While searing the potatoes and carrots, also saute the other ingredients in another pan with corn oil and Dari creme. First add the ginger, after a few minutes add the garlic garlic, then the onions.
- Add the chicken in with the sauteed ginger, garlic and onions. Let the chicken sit for a bit before adding lemon grass and coconut water.
- Place most of the pure coconut milk in a bowl and set it aside for later.
- Add 3 or 4 bowls of water to the chicken which is in the pan.
- Then, take around 3 spoons of pure coconut milk and add it to the broth.
- Let it boil for a bit, then add 2 chicken cubes, 1 spoon black pepper, green chili finger, red chilis, 2 spoons of Fish sauce/Patis.
- Taste it and if it's salty, then add more water... or if it lacks flavor, then add fish sauce or salt.
- Let it boil for a few minutes then add the bell peppers, potatoes, carrots and half of the curry spice mix. Then let it boil more.
NOTE: This already tastes good, but remember that we would still add the pure coconut milk. You can also add a bit of water because the sauce immediately thickens. Adding these ingredients could alter the flavor and make it a bit bland.
NOTE 2: Adjust the flavor to your personal preference. After adding the pure coconut milk and water, you could add more fish sauce or salt, black pepper and curry spice mix.
I personally ended up using the whole pack of curry spice. After adding all of these ingredients, let it boil and wait for the sauce to thicken and reduce a bit, then it's done.
